All-Clad pioneered multi-ply cookware in the 1970s with the d3 (also called TriPly) series, when they layered aluminium, an excellent conductor of heat, with stainless steel, which is excellent at being non-reactive, oven-safe up to 250°C, and induction hob-compatible. All that plus a high-quality R3 non-stick coating that ensures effortless food release and easy clean-up, as well as up to 30% better scratch resistance. This pan feels light to lift but is sturdy and warp-resistant, with a comfortable handle that moulds to an underhanded grip and stays cool on the hob, and a curved rim that allows drip-free pouring. A little heat goes a long way with this heat-responsive pan; like all non-sticks, we don’t recommend going over a medium-high heat or putting it in the dishwasher.
