This Mineral B Wok from De Buyer is ultra-durable and can withstand sky-high levels of heat, to sear and brown to perfection. Designed for frequent and intense use, it will only improve over time thanks to a natural, easy-release layer of 'seasoning' that develops as you cook in it. You'll know how well-seasoned the pan is based on the colour: It will go from grey to black. When manufactured, it's treated with organic beeswax, which protects the pan from oxidation in transit—this needs to be removed by you before use. (To learn how to do that, click here.) The pan has a 1.5 mm-thick body of raw white steel, and an ergonomic curved French-style steel handle that stays cool and makes it easy to lift. Suitable for all hobs, including induction, it's great for healthy and quick cooking as it requires little fat. Ideal for stir-fries and sautéed vegetables, the steel allows the Maillard reaction, a caramelisation of juices on the surface and tenderness inside.
