Kai Shun Classic Bread Knife / 23cm / White

This Japanese bread knife has a unique design where the serration changes at the midpoint (among other great features). This makes slicing bread feel effortless.

---DETAILS---

Kai Shun adapts centuries-old samurai blacksmithing to make exceptional Japanese knives for the modern cook. Every knife in their world-renowned Classic range has a steeply tapered blade, which makes it much sharper than a Western knife.

A core of hard VG MAX steel, surrounded by 32 layers of Damascus steel, makes this Classic Bread Knife extremely durable and rust-resistant, ensuring the knife retains its edge. The layers, which create a unique pattern on each knife, help prevent food from sticking to the side of the blade, and the direction of the serration changes at the midpoint, making the slicing feel effortless. This is especially great at the bottom of the loaf and for tricky parts of the bread. The tarnish-proof pakkawood handle has a chestnut (or ‘D’) shape that moulds perfectly to your right hand, with a slight bow shape that keeps wrists slightly elevated from the counter for comfort. This long bread knife neatly slices through thick crusts without pushing or tearing the softer interiors, with teeth in both directions for efficiency.

---BENEFITS---

'Kai Shun bread knives outperformed other bread knives we tested by miles. They are comfortable to hold, and can slice tricky sourdough loaves (with hard exteriors and soft interiors) with ease, without tearing or creating excessive crumbs.'
