Kai Shun Premier Tomato Knife

A medium-sized 15cm serrated Japanese tomato knife designed to cut fruits with delicate exteriors, featuring a hammered 'tsuchime' finish on the blade.

---DETAILS---

Kai Shun adapts centuries-old samurai blacksmithing techniques to make exceptional Japanese knives for the modern cook. For their Premier range, they collaborated with German chef Tim Mälzer to create knives with ambidextrous handles (as the traditional Japanese-style handle of the Kai Shun Classic range is designed for a right-handed grip), as well as a unique hammered finish on the blade ('tsuchime'). In addition to looking beautiful, these air pockets prevent food from sticking to the knife as you prep. Every knife feels effortless to use, with a core of hard VG MAX steel surrounded by 32 layers of Damascus steel for durability and rust-resistance. This tomato knife has tight serrations that make it ideal for cutting tomatoes or small, delicate fruits like kiwis, nectarines, and figs, with a sharpness that prevents them from tearing and releasing too much water. (Be careful to avoid hard, sudden impact with stones in stone fruit, to protect the blade.) Read our Japanese knife care guide here.

---BENEFITS--- 'Kai Shun goes the extra mile to preserve Japanese tradition while adapting knives for the modern cook. Their knives feel effortless to use, with the most satisfying degree of precision.'
