Netherton Foundry Wok 2 Handle No Lid / 13" / 33cm

 

A lightweight spun iron wok that’s perfect for high-heat stir-frying, with a flat base for induction-compatibility.

---DETAILS--- Due to their unique spun iron construction, Netherton Foundry pans have all the advantages of cast iron cookware with half the weight. This wok is the thinnest item in the range, which makes it exceptionally heat-responsive—meaning you can achieve that slightly smoky flavour and crisp texture Cantonese chefs call ‘wok hei’. It can withstand the heat of a burner set to high without warping, as long as you make sure to start with low heat and gradually build up to high to avoid thermal shock, which is also caused by adding cold water to a hot, empty pan. The two handles make it easy to lift and carry, and unlike standard carbon steel woks, there’s no need to season before use. A matching lid is available and sold separately here. Like other Netherton Foundry pans, this wok comes pre-seasoned with flax oil and becomes more non-stick over time as long as you maintain it properly. R
