All-Clad pioneered multi-ply cookware in the 1970s with the d3 (also called TriPly) series, when they layered aluminium, an excellent conductor of heat, with stainless steel, which is excellent at being non-reactive, oven-safe up to 250°C, and induction hob-compatible. All that plus a high-quality R3 non-stick coating that ensures effortless food release and easy clean-up, as well as up to 30% better scratch resistance. These pans feel light to lift but are sturdy and stable, with comfortable handles that mould to an underhanded grip and stay cool on the hob. Curved rims allow drip-free pouring. A little heat goes a long way with these heat-responsive pans; like all non-sticks, we don’t recommend going over medium-high heat or putting it in the dishwasher.
